When should a Minecraft LP end?

I was wondering what a proper ending of a Minecraft LP should be. I know I'm far off from ending mine, but I was just curious. When should a Minecraft LP end?

That is a good question, and it goes beyond just Minecraft, any sandbox game suffers from the same issue. One of my Minecraft series has a definitive goal which was set at the beginning of the series. It's something I wish I'd done for each sandbox game I'm covering, but I'll probably just have to pick an arbitrary end state at some point.

end it after killing ender dragon or when you just think your viewers are starting to get bored

once you or the viewers get bored of it, you should put it on an indefinite hiatus at that point and pick it up when you want to get back into minecraft.
