is uploading once a week enough? Or should I do more? How well do you think once a week uploads work?

Let me ask this instead: What do you have time with? Does it take a week to make a good enough video?
If you upload more, just for the sake of it, it will show in the quality and might not help you at all.

I would start with once a week if you can manage it. Then if you feel like you want to upload faster, you can change it. I wouldn't set the goal too high to start out with, because the burnout is real.
