I really want to get into making videos but are there games I can't do?

Blizzard and Valve are fine with making videos out of their games (they have a page for it), but does that mean there are some games I can't make a video on?

because I'd rather not have my account deleted shortly after it's started.

and if there are games I can't do, how would I get permission?

By asking the creators of the game. Get a written reply. Yes or no. If it's a "yes", keep that email. Save it. Take a screenshot. Print it and file it in a safe place. If you ever get a strike or a claim, you now have written proof that you have permission.

You can make a video on any game you want unless you're under some sort of legal contract that says you can't.
Some companies (s****y ones like Nintendo or Atlas) will try to flex their big, legal muscles in illegal ways, but letsplays (or other forms of gaming content, I see "game" on this website and assume letsplay) completely fall under fair use.
If a dev or publication company tries to mess with you legally for a video, you should fight back against it
