Chicken Dinner Ingredients: 1 whole roaster chicken (about 5-6 pounds) 1 pound new potatoes 1 pound carrots Rinse the chicken and pat dry, removing any giblets inside the cavity. Wash and peel the carrots and wash the potatoes. Cut the carrots and potatoes into large chunks and place in a shallow baking pan, seasoning with salt and pepper. Place a roasting rack (or a baking rack) over the vegetables and place chicken on rack. Place pan in a pre-heated 425F oven for 10 minutes, then reduce the heat to 350F and roast until cooked through, about 1 hour 20 minutes or until juices run clear and/or the internal temperature is at least 165F.
